This month I want to discuss Jerusalem Artichokes...
Also known as: Sunchokes, Sunflower Artichoke, Sun root, Wild Sunflower, Topinambur, Earth Apple
Species of the Sunflower, Jerusalem Artichokes (Helianthus tuberosus).

Tuber perennial type of vegetable used for baking and cooking. But, yet can be eaten raw, has a sweet nutty flavor and crunchy when fresh.
Very easy to grow : I recommend starting in smaller pot until you get a larger area or container such as half barrel or so ready. They are invasive and will spread now it is not horrible because they are edible.
They yeild 5 bushels (dont ask me I never understood bushels) per 100 food row (again throwing hands up here) but I do know this - one small root as shown below will produce 75-200 tubers. However, you can cut each node off and make it produce itself also.
Has beautiful flowers that blooms in early mid fall and 4" across and 6 to 9' tall attracts pollinators and blooms are nice site for the garden.
Once they are in full sun, however if its hot sun you want there to be some kind of break in there. I grow mine in the clearing but has some over cast trees.
Full Sun, well drained soil, then it is 120 to 140 days to maturity (plant them 18 to 24" between plants and 3 to 4' between rows) No pruning No additional care needed watch nature take the lead.
Each Root can produce 75 to 200 tubers, Sq yard can produce several pounds, and 1 acre 7 to 9 tons.
