Good Morning - I love watching Brenda Gantt

 Dear Page Friends : 


I have just fell in love with this lady "Brenda Gantt" Cooking with Brenda Gantt or her other page



I first saw Brenda on facebook that linked me to her videos on her youtube channel, I watched it about 20 times over and over about the biscuits - I remember the recipe like its my name. I remember her and the flour bowl lol reminds me of an old fashioned memory of my Great Great Grandma Opal Cox. Here are the biscuits I learned to make.






I wanted to share this with you because there are never enough posts about those who will be forgotten and had so much to share. I personally never met her but I really adore her every video. She is so down to earth and really does not stage her videos. She is a true treasure in my book.

Potato Magic Notes remix

Potato Notes 

These notes are about the mounding method and making your potato garden a perennial success. There are many ways to plant potatoes and I would love to hear how you grow and maintain your beds.

Potato Facts and Processes:

One plant yields approximately 3 to 4 pounds / One seed potato can produce 4 to5 Plants. Use your own potatoes and grow them - this is a very sustainable crop !

    


Ideal Planting is March, April, May (latest time to plant is July 1st) / Harvest the earliest in July - August/ Last harvest is August - October. 

4'x4' sq ft bed can support 16 potato plants

You can leave the potatoes in the ground over winter to start a perennial garden.

Growth time for the potato plants 2-3 weeks, Hill them material over them at this time. Plants should be about 6-8" tall. 

Flowering begins around June 8-12 weeks, but if you pinch them off it will promote the tubers to grow. 

To prepare the beds  

Mound the dirt and lay the seed potato down about 14-16" (35-40cm) apart and cover with any of the following materials. 

****Grass clippings, straw, hay, saw dust, mulch, leaves, and or any other materials that are not wet and heavy. 



When you place the Potatoes in the rows make sure you have space between them, and lose soil under them. 


Use your choice of materials to mount around the potatoes at 2-3 weeks, and again at minimum of 2 times before harvest (potatoes should never see sunlight) They will turn green. 



When the potato plants are ready to harvest the foliage will die completely. Also make sure you save the super small tubers they can be replanted for a over winter garden.




When storing your potatoes you can use a variety of things and use a lot of materials. Some of the most popular are mesh sacks , crates and then burlap bags. Cardboard is good but it must be a cool dark place. Here is a great deal - Mesh sacks

I can anything "Dough"


To All My Friends: 


Here is a great recipe I have tested truly on pretzels, bread, hot dog buns, and even bread sticks. I literally can not find anything I cant make this into.  Heck I even made doughnuts with this dough.

I preheat my oven to 450 degrees, however remember I am using a small camper gas oven. I bake 10 minutes then check them always using a toothpick or butter knife.

ALL PURPOSE DOUGH 

2 Cups All purpose flour

2 TBS dry active yeast 

1 TBS honey / sugar

Pinch of salt

5 Cup Flour

1/4 Cup Olive oil 

***USE HONEY FOR SWEET DOUGH AND SUGAR FOR BASIC DOUGH***


Step 1: First Take 2 cups of warm water add 1TBS honey/sugar , then add 2 TBS years (I use instant yeast )

Step 2:  Let sit until the yeast cauliflowers or looks bubbly (estimated 3-5 minutes)

Step 3: Then pour yeast mix into a large bowl and add pinch of salt.

Step 4: Mix in flour adding little at a time ( I put flour in the bowl with salt and pour in the mix all at once and mix lol)

Step 5: Then well mixed rub olive oil on your hands and knead dough well then cover and let sit for 10 minutes.

**** Before taking dough out of bowl add more olive oil to hands **********

Final step : Make into desired product (just make sure you are remembering it will rise and expand. 

You may also let it rise before baking or deep frying it !!!

Our journey is wide open turning points and trials multiply. 

Yesterday I realized how much beauty lies in front of us. Today I focus on the big picture and we are preparing for our homestead travels.

Our first Homestead "1362"

 We will call this Homestead 1362

This was our first Homestead go about 2019


All of the kids were home still and the Oldest was a Junior , and she also got her license to drive her and her sister to school. 

The Twins were in 5th and caught the bus at the end of the drive about .5 of a mile to the bus stop, which gave them the actual feel of walking to school lol... The Kids found alot of things to do and place to adventure on this farm.



Corey, my husband, was working very close to home and at the time working afternoon shift. He got us a chicken coop from a co-worker and then build a larger one with a shed (from pallets). He also sourced a garden table and tiller for me to start the process of rooting our homestead.

As we got the chickens and rabbits. We sourced an old deep freeze to hold the food to keep the critters out of it from another co-worker of Corey's. Everything was set up and sourced that we needed by now and going smooth.





Now, as we moved on I sourced Elephant and Music Garlic from a deer friend of mine at Shepard's Flock Homestead. It is a family run amazing page if you ever get the chance to read the blog or visit the page you will see they are very simple humble people. 

We had two seasons at this home, but when the owners decided on propane, and it ended our free gas we decided that we needed to uproot, and find another option.







I dormant the plans I could and we moved the rest possibly missing some due to the time of year.
